Spicy Egg and Sweet Potato Bowl- A delicious, protein forward recipe that can be eaten for breakfast lunch or dinner. This recipe features simple ingredients like roasted sweet potatoes, chicken sausage, and eggs fried in your favorite hot sauce.

Breakfast.. it’s what’s for dinner!

I typically do not crave egg dishes or even really eat them very often. So, when I told my husband I was writing a spicy egg bowl recipe, he was shocked.

This recipe is not only for egg and breakfast food lovers but for anyone who just loves a simple, nourishing meal. The base of the bowl is roasted sweet potatoes that we will coat in warm spices, topped with hearty chicken sausage crisped up and the focal point- a perfectly fried egg in your favorite hot sauce. You’ll find yourself craving this bowl for breakfast, lunch and dinner.

So, let’s get into it!

How to make this spicy egg and sweet potato bowl

Gather the ingredients

Eggs- of course! I try to purchase vegetarian fed eggs when I eat them. The yolk is a beautiful orange color and they have much more flavor.

Sweet potatoes

Chicken sausage- I was able to find maple chicken sausage at my local store but most any variety will work. If you don’t love chicken sausage, you can of course substitute with pork sausage links.

Hot sauce- We have so many hot sauces in our pantry it’s hard to pick a favorite. I love a vinegar forward flavor hot sauce on eggs; so, I chose Louisiana Hot Sauce for this recipe. It’s also the one I grew up eating so I know I always have it on hand. Use your favorite!

Smoked paprika- my go to seasoning for sweet potatoes.

Garlic powder

Salt + Pepper

For topping- Avocado and feta cheese are my favorites

Begin by cutting your sweet potato into small pieces. I like half moons when roasting. Cut the sweet potato in half lengthways and then slice each half into half moons.

Toss the sweet potatoes onto a sheet pan with a drizzle of olive oil, smoked paprika, garlic powder , salt and pepper. Roast the potatoes until fork tender.

Meanwhile, cook the spicy eggs. Start by heating a skillet over low heat. Add a few drops of olive oil to the skillet, a couple of tablespoons of hot sauce and crack the eggs on top.

Once the eggs and sweet potatoes are finished cooking, start arranging your bowl. Sweet potatoes, cooked chicken sausage, and spicy eggs on top. Add sliced avocado and crumbled feta cheese when serving.

Spicy Egg and Sweet Potato Bowl

Ingredients
  

  • 1-2 Eggs
  • 1 medium sweet potato
  • 1 serving chicken sausage links cooked
  • 1-2 TBSP hot sauce like Louisiana or Crystal
  • olive oil for drizzling
  • 1/4 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp salt plus more if needed
  • pepper
  • avocado slices for topping
  • crumbled feta or cotija cheese for topping

Instructions
 

  • Preheat the oven to 425 degrees
  • Begin by cutting the sweet potato into bite sized pieces. For half moon shaped, cut the potato lengthways and then cut each individual half into slices.
  • Add the cut sweet potatoes to a sheet pan and toss with a drizzle of olive oil. Add the smoked paprika, garlic powder, salt and pepper and give them another toss to coat.
    Roast the potatoes at 425 for 15-20 minutes until they are fork tender.
  • Meanwhile, cook the spicy eggs. To a nonstick skillet add a few drops of olive oil and heat on low. Add in 1-2 TBSP of your favorite hot sauce and crack the egg on top. Fry the egg to your liking.
  • When the egg and sweet potatoes are finished cooking, add them to a bowl along with the cooked chicken sausage. Top the bowl with sliced avocado and crumbled feta cheese.
