Begin by cutting the sweet potato into bite sized pieces. For half moon shaped, cut the potato lengthways and then cut each individual half into slices.
Add the cut sweet potatoes to a sheet pan and toss with a drizzle of olive oil. Add the smoked paprika, garlic powder, salt and pepper and give them another toss to coat. Roast the potatoes at 425 for 15-20 minutes until they are fork tender.
Meanwhile, cook the spicy eggs. To a nonstick skillet add a few drops of olive oil and heat on low. Add in 1-2 TBSP of your favorite hot sauce and crack the egg on top. Fry the egg to your liking.
When the egg and sweet potatoes are finished cooking, add them to a bowl along with the cooked chicken sausage. Top the bowl with sliced avocado and crumbled feta cheese.
