Fig and prosciutto pizza with hot honey: Crispy pan pizza layered with creamy goat cheese, sweet dried figs and salty prosciutto. The only thing that could make this better is the hot honey drizzled over the top!

It’s a new week and I’m here coming to you with another sheet pan pizza recipe! We have a serious love for pizza in our household, so these recipes are definitely some of my favorite to create. This fig and prosciutto pizza is special, however.
There is a gourmet pizza restaurant and bar near where my family lives and it’s one of our favorite spots to order from. They have a fig jam and prosciutto pizza that we crave regularly; so I thought I would create my own version to welcome in Fall.
So, let’s get into it!
How to make fig & prosciutto pizza with hot honey
Gather the ingredients
Pizza dough- I usually use store bought pizza dough because it is a time saver, but feel free to make your own!
Prosciutto
Dried figs- These are one of my favorite fall ingredients. I typically find them at Whole Foods or Trader Joe’s; but they can also be ordered online if your local grocery store doesn’t carry them.
Goat cheese- I prefer to use goat cheese logs when making a recipe. I find the pre crumbled goat cheese to be to dry and it doesn’t melt as well.
Mozzarella cheese- I use pre shredded cheese when making most pizzas. I think it browns better and gives you a much better cheese pull. If you wanted to keep the flavors simple and light, you can leave off the mozzarella and the pizza will be just as delicious!
Hot honey- This is a delicious condiment to keep on hand. I usually make a small batch each time I start a recipe. However, there are also great brands in the store to try.

Thyme

Begin by proofing your pizza dough. This step is the most important step in making pizza. It’s crucial to let the dough rise slowly in a warm area for at least an hour before baking.
Tip for proofing pizza dough: To check if your dough has been proofed long enough, begin to slowly stretch the dough. If the dough bounce back, let it rest and proof for a little while longer. Don’t force the dough to stretch if it’s not ready- it will become tough.
Once the dough has proofed, stretch it onto an oiled 9×13 sheet pan.
Sprinkle garlic powder and thyme over the dough along with another drizzle of olive oil. Crumble the goat cheese over the dough, add on the chopped figs, and a little bit of mozzarella cheese.
Before baking, curl the prosciutto slices up and add them on top of all the other ingredients.
Place into the oven to bake until browned and bubbly and serve with a drizzle of hot honey and more thyme.

Fig and Prosciutto Pizza with Hot Honey
Equipment
- 9×13 Sheet Pan
Ingredients
- 1 lb pizza dough
- 1/2 cup dried figs chopped
- 3 ounces goat cheese not pre-crumbled
- 4 ounces prosciutto thinly sliced
- 1/2 cup mozzarella cheese shredded
- 1/2 tsp garlic powder
- olive oil
- 1/2 TBSP fresh thyme leaves
Hot Honey Drizzle
- 1/3 High quality honey
- 1/2 tsp dried red pepper flakes
- 1/4+ tsp cayenne pepper
Instructions
- Proof the pizza dough in a warm area for at least one hour. Be sure to test your dough’s proof before starting! To test your dough, gently begin stretching the dough. If it stays put, it’s done proofing. If the dough bounce back, allow it to continue resting for 30 more minutes.
- Preheat the oven to 425 and drizzle a sheet tray with olive oil to coat the bottom.
- Stretch the pizza dough onto the oiled tray. Top the dough with a drizzle of olive oil, the garlic powder and fresh thyme.
- Top the dough with crumbled goat cheese, the chopped dried figs, and mozzarella cheese.
- Tear each slice of prosciutto in half and curl. Place the curled pieces of prosciutto onto the top of the pizza.
- Bake for 12-15 minutes until the dough is browned and the cheese is bubbly.
- Let the pizza cool for 5 minutes and then drizzle over the hot honey before serving.
Hot Honey
- Warm the honey in a glass bowl in the microwave for about 15-20 seconds. The honey will heat up quickly so be careful!
- Add in the red pepper flake and cayenne pepper to the bowl of honey and mix together. Taste and adjust depending on how fiery you want your hot honey to be. Remember it will be combined with other flavors on the pizza, so the flavor will be toned down slightly. *NOTE: we like our hot honey really spicy. Be sure and taste the honey before adding it to your pizza! Always do what tastes best for your family.
- If you have any hot honey leftover, store at room temperature in an air tight container for future use.
