Vegetarian Balsamic Cauliflower Wrap

- 1 large head of cauliflower
- 2 tsp smoked paprika
- 2 tsp garlic powder
- salt and pepper to taste
- extra virgin olive oil
- 4 whole wheat pita wraps
- hummus your favorite brand
- arugula
- roasted red peppers cut into strips
- balsamic glaze for drizzling
- crushed red pepper flakes sprinkle
Preheat your oven or air fryer to 400 degrees. Line a baking sheet with parchment paper for easy clean up.To roast the cauliflower, start by cutting the cauliflower into florets. Once most of the stalk has been removed, slice each floret into thinner pieces. This makes it easier to eat in the wrap. Once the cauliflower is sliced, toss with olive oil, paprika, garlic powder, salt and pepper and scatter on the prepped baking sheet. Roast for 8-12 minutes depending on your oven, until crispy and tender. To make the wrap, warm a pita in the toaster. When that is done, smear 2 tablespoons of hummus on the wrap. Top with crispy cauliflower, arugula and roasted red pepper strips. Drizzle a little balsamic glaze on top and sprinkle crushed red pepper flakes over the wrap.Enjoy!
