Sweet and Savory Baked Brie in Pastry

Creamy Brie cheese covered in raspberry jam, salty bacon and wrapped in a buttery puff pastry.

- 1 sheet puff pastry dough
- 1 wheel Brie cheese
- 1/4 cup raspberry preserves
- 4 strips bacon thick cut
- 1/2 TBSP red pepper flakes
- 1 tsp fresh thyme leaves
- drizzle of honey optional
Start by cooking the bacon. Spread the bacon on a lined baking sheet and bake at 375 degrees for 15-20 minutes until crispy.
For the wheel of Brie, remove the majority of the rind (this step is optional. I just prefer it personally). Cut the Brie into chunks and set aside.
Chop the cooked bacon into small pieces.
Unfold and place the sheet of puff pastry dough onto a piece of parchment paper. Smear the raspberry jam evenly onto the center of the puff pastry. Top the jam with the cubes of Brie cheese. Add the bacon to the top of the cheese. Sprinkle the red pepper flakes and thyme on top.
Close the puff pastry up by bringing all four corners into the center.If using, drizzle the pastry with honey now. Bake the Brie at 400 degrees for 20-25 minutes until the pastry is golden brown.
Allow the baked Brie to cool for 10 minutes before diving in and serving it up.
