Skillet Cheesy Taco Cauliflower Gnocchi

This cheesy skillet taco is made healthier with cauliflower gnocchi and is guaranteed to have your whole crew going back for more!

- 1 lb ground chicken, turkey, lean beef or meat substitute
- 1 package cauliflower or potato gnocchi cooked according to package
- 14.5 ounce can of fire roasted tomatoes drained
- 2-3 green onions chopped
- 2 cloves garlic minced
- 2 tbsp chipotle with adobo sauce chopped
- 1 cup sharp cheddar cheese grated
- 2 tsp chili powder
- 2 tsp smoked paprika
- 1 tsp cumin
- salt and pepper to taste
- olive oil for sautéing meat
For topping
- cilantro
- jalapenos
- avocado diced
- sour cream
- hot sauce
Step 1: Preheat the oven to 375 degrees.
Step 2: Cook gnocchi according to the package instructions and set aside.
Step 3: Heat olive oil in an oven safe skillet on medium and add the ground meat. Once the meat starts to brown, break it up with a spoon and add the garlic, chili powder, cumin, smoked paprika, salt, and chopped chipotles, if using. When the meat is fully cooked, check for seasoning and add salt and pepper if needed.
Step 4: Add the can of drained tomatoes to the ground meat mixture and remove the skillet from the heat. Fold in the cooked gnocchi and chopped green onion.
Step 5: Top the skillet with grated cheese and bake for 15-20 minutes until the skillet is bubbly around the edges.
Let the skillet set up for about 10 minutes before serving and top with all your favorite taco toppings!
