Sweet and Salty Baked Brie in Pastry

Today I’m focusing on another appetizer recipe because, well… tis the season!
I never was a huge fan of Brie appetizers in the past. Sometimes I find the cheese to be a little too overwhelming. BUT, once I tasted the classic Brie and jam combination, I was totally hooked.
This baked Brie is truly so tasty. It actually came to me one afternoon when I was being indecisive. I knew I wanted to create a cheesy appetizer but couldn’t decide on a salty or a sweet. Then I thought- who needs to decide? Why not both?
The sweet and salty baked Brie was born and I never looked back. The flavor profile of this particular recipe was inspired by a breakfast sandwich we love to make at home. Sweet jam, salty bacon, spicy chili flakes and decadent cheese. The addition of the puff pastry shell just takes this recipe over the top.
So, let’s get into it!
How to make this baked Brie
Gather your ingredients
Puff pastry sheet
Wheel of Brie cheese
Preserves or jam- I decided to use raspberry preserves for this recipe. I like the combo of this tart flavored jam with the strong Brie flavor. Fig jam or blueberry preserves would also be wonderful.
Bacon- We are going to cook our own bacon for this appetizer. As much as I love a shortcut, precooked bacon just doesn’t taste the same.
Thyme
Red pepper flakes
Honey (optional)- I added honey to the top of the puff pastry crust to add an extra sweet layer but this step is totally optional.

Start by cooking the bacon. Once the bacon is cooked and cooled, chopped into small pieces.
Cooking Bacon in the oven: Line a baking sheet and arrange the bacon in a single layer. Cook the strips at 375 degrees for 15-20 minutes until crispy.
Next prep the wheel of Brie. Cut some of the rind off of the Brie and then cut the wheel into big chunks.
Place the puff pastry sheet on a pan with parchment paper. Add the raspberry preserves to the puff pastry. Top the preserves with the chunks of Brie and the chopped bacon. Sprinkle with red pepper flakes and fresh thyme leaves.
Fold the puff pastry corners onto itself to close all of the ingredients into the pastry. Drizzle with honey if using.

Bake the Brie until golden brown and remove it from the oven to cool. Let the baked Brie cool and set up for 10 minutes before serving.

Sweet and Savory Baked Brie in Pastry
Ingredients
- 1 sheet puff pastry dough
- 1 wheel Brie cheese
- 1/4 cup raspberry preserves
- 4 strips bacon thick cut
- 1/2 TBSP red pepper flakes
- 1 tsp fresh thyme leaves
- drizzle of honey optional
Instructions
- Start by cooking the bacon. Spread the bacon on a lined baking sheet and bake at 375 degrees for 15-20 minutes until crispy.
- For the wheel of Brie, remove the majority of the rind (this step is optional. I just prefer it personally). Cut the Brie into chunks and set aside.
- Chop the cooked bacon into small pieces.
- Unfold and place the sheet of puff pastry dough onto a piece of parchment paper. Smear the raspberry jam evenly onto the center of the puff pastry. Top the jam with the cubes of Brie cheese. Add the bacon to the top of the cheese. Sprinkle the red pepper flakes and thyme on top.
- Close the puff pastry up by bringing all four corners into the center.If using, drizzle the pastry with honey now.
- Bake the Brie at 400 degrees for 20-25 minutes until the pastry is golden brown.
- Allow the baked Brie to cool for 10 minutes before diving in and serving it up.
