Easy Roasted Radishes with Feta Sauce
Today I’m ending this hot and humid Monday with a light recipe of roasted radishes and creamy feta sauce. It’s the perfect way to use extra veggies in your fridge before they go to waste and it’s super simple to make.
Before I wrote this recipe, I had never had or even heard of roasting radishes. I love radishes sliced in a salad, on top of a pita wrap, or even just dipped in hummus for a snack but never gave them much thought other than that. Recently I bought a bunch of radishes for a lunch recipe and ended up having a lot leftover. It kills me to throw away produce because, not only is that wasteful, but vegetables are not cheap! So, enter this recipe for easy roasted radishes.
I started thumbing through cookbooks for inspiration on what else I could do with them and came across roasting them in the oven. They were served alongside a whole roasted chicken, but I knew I wanted to create something a little lighter than that. I love a roasted chicken but running the oven for 90 minutes in the dead of summer is not my idea of a good time. In the end, I decided to cook it alongside some seabass and am happy to report it was delicious!
What are radishes?
A radish is a root vegetable that is similar to the cabbage family. Actually, once they were roasted, I noticed they had more of a cabbage like flavor to them. When eaten raw, a radish has a slightly peppery flavor, almost spicy. Roasting the radishes really tames down this peppery flavor and, they become much more mild. The perfect veggie to add to any roasting medley.
The Details
Just like roasting any other vegetable, radishes are very easy to prepare. I used about a pound of radishes for this recipe, trimmed of the leafy green tops and the roots. Some recipes showed roasting the radishes whole, but I decided to quarter them for faster cooking. Also, I had broccolini on hand, so I added that to the roasting pan as well. The vegetables are simply tossed in olive oil, fresh garlic, a little diced shallot and salt; then roasted for 10-15 minutes. Super simple!
Feta Sauce
This sauce MAKES the side dish. I love feta on everything and turning into a sauce just takes it over the top. The best part is it comes together easily with ingredients you probably already have on hand. All you need is Greek yogurt, fresh garlic, dill and oregano, red wine vinegar and feta of course. I definitely want to stress using fresh garlic verses garlic powder for this recipe. The fresh garlic is the key to this sauce. My favorite thing about making this recipe is the leftovers the next day. If you have leftover sauce like I did, try it as a dipping sauce for fries. So good.
What other vegetables go with roasted radishes?
Like I mentioned before, I had broccolini on hand, so I used that along with the radishes. You could also use regular broccoli florets, carrots or fresh green beans would work well in this recipe also.
Can I use frozen vegetables?
When roasting veggies your goal is to achieve a crunchy result, so for this particular way of cooking, I don’t suggest using frozen. A frozen vegetable will release too much water during cooking, so you won’t get those crispy crunchy bits that make this dish so delicious.

Easy Roasted Radishes with Feta Sauce
Ingredients
- 1 bunch radishes
- 1 bunch broccolini
- 1/4 cup olive oil
- 2 cloves of garlic minced
- 1/2 diced shallot optional
- flaked sea salt
Feta Sauce
- 1/2 cup full fat Greek yogurt
- 1 large clove of garlic minced
- 1 tsp red wine vinegar or lemon juice
- 1/2 tsp dried oregeno
- 1/2 tsp dill chopped
- 1/4 tsp salt
- fresh ground black pepper
- 1/4 cup feta crumbles
Instructions
- Preheat your oven to 400 degrees and line a baking sheet with parchment paper.Quarter or halve the cleaned radishes depending on their size and trim the broccolini of the tough lower stems. Place the cut vegetables in a large bowl and toss with the olive oil, minced garlic cloves and shallot if using.Next scatter the vegetables on the lined baking sheet, making sure to not over crowd the pan. If you're using a smaller oven like I am currently, you may want to roast the veggies in batches. Bake for 10-12 minutes shaking the pan halfway through to ensure even cooking. Sprinkle with flaked sea salt while the vegetables are still hot.
- While the veggies are roasting, make the feta sauce. Combine all ingredients except the feta into a small bowl and mix together. Once mixed, gently stir in the feta crumbles and set the sauce aside. To serve, lay the roasted vegetables on a platter and dollop with the feta sauce or serve on the side.
