Chocolate Covered Raspberry Chia Seed Pudding- This high protein chia pudding is simple and delicious. Your favorite chocolate protein powder blended with Greek yogurt, chia seeds and cinnamon and topped with crunchy chocolate chips and frozen raspberries.

I have to admit I was hesitant to jump on the chia seed pudding breakfast train. But now that I’ve been turned on to this delicious treat, I’m so glad I did. This truly has the consistency of the pudding cups we all knew and loved as kids!- but with much more healthy benefits, of course.

Because I work out daily, I like to start the day with some type of protein. As I’ve mentioned before, I’m not a huge fan of eggs so I tend to lean on Greek yogurt and clean protein powders to start my morning off right. This chia seed pudding is perfect for that high protein boost I’m looking for!

One of my favorite ice cream flavors is creamy raspberry with chunks of dark chocolate folded throughout. I based this recipe on that childhood favorite of mine. It has the creamy texture of Greek yogurt and the rich and bitter flavors of dark chocolate from the protein powder. The best part being dark chocolate chips and tart raspberries folded in with every bite.

How to make chocolate covered raspberry chia seed pudding

Gather the ingredients

Greek yogurt- I like to use plain whole milk Greek yogurt but 2% or vanilla Greek yogurt will work as well.

Chocolate protein powder- I love a collagen protein powder to get double the healthy benefits! This is my favorite brand but feel free to use any chocolate protein powder you enjoy.

Chia seeds

Milk- I usually use vanilla almond milk or 2% milk. Any milk or milk alternative works just fine.

Cinnamon powder

Salt

Optional honey

Raspberries- I like to use frozen berries and mix them into the pudding to resemble ice cream. If frozen berries are too hard to eat, fresh berries will be just as good.

Dark or semi sweet chocolate chips- These are one of my favorite toppings. I love 100% real chocolate mini chips for the best flavor. These Enjoy Life semi sweet chips are my go to.

Prepping the chia seed pudding

Start by grabbing a small bowl to prep your pudding in.

Into the bowl, add the Greek yogurt, chocolate protein powder, chia seeds, milk, salt and cinnamon. Then, stir the pudding together until it’s completely combined.

Spoon half of the pudding into one small jar and the other half of the pudding into the second jar.

Refrigerate overnight. When you’re ready to eat, top the chia seed pudding with the raspberries and chocolate chips.

How do I store chia seed pudding?

I like to prep my pudding in air tight glass containers. Keep the containers in the refrigerator and it will stay fresh for 5-7 days this way.

Keep the toppings separate. Remember to leave the berries off until the day you are ready to eat. It’s ok to add the chocolate chips while prepping the pudding; if you don’t want to add an extra step the morning of.

Ingredients
  

  • 1.5 cups greek yogurt plain or vanilla
  • 2 scoops/servings chocolate protein powder
  • 4 TBSP chia seeds
  • 4 TBSP milk or milk alternative
  • pinch Salt
  • pinch cinnamon
  • honey for extra sweetness optional
  • 1/2 cup Frozen raspberries fresh if prefered
  • 4 TBSP semi sweet or dark chocolate chips

Instructions
 

  • Into a medium bowl, add the Greek yogurt, protein powder, chia seeds, milk, salt and cinnamon and mix well.
    Taste the pudding mixture and add honey if you prefer a sweeter flavor.
  • Once the pudding is mixed, split the mixture into two airtight glass containers.
  • Refrigerate overnight or for up to 5-7 days.
  • When ready to eat, serve with chocolate chips and raspberries.
