Minnie Mouse Rice Krispies (that even the adults will love)
Minnie Mouse Rice Krispies- These rice cereal treats are cute enough to be a hit with the kids but delicious enough to have the adults going back for more!

Ok I fully realize there is no shortage of Rice Krispie recipes out there on the internet; but these are a-mazing. Though I may be a little bit biased, I really do think you’ll be glad you tried these.
Brown butter is the star in the recipe! It is super simple to make and makes a world of difference in the flavor. If you have never made brown butter before, don’t worry, I’ll give you all the details down below!

A little back story on these Minnie Mouse Rice Krispie treats. My best friend was putting together a birthday party for her daughter who was turning two. She loves all things Minnie Mouse so the theme was perfect! Since we don’t have children of our own, I had never looked into all the amazing posts there are on throwing a Minnie Mouse party.
We came across some pictures of Minnie Mouse shaped treats, and me being me, I wanted to go all in! I get serious joy in creating delicious food, but if I can make it cute and tasty, even better. So brown butter Minnie Mouse Rice Krispies were born.
How to make Minnie Mouse rice krispies
Gather the ingredients
Salted butter: I like to use salted butter when doing brown butter recipes because the flavor is must more intensified. If you only have unsalted, just add a 1/2 teaspoon of salt in once the butter is browning. ( more on that down below)
Mini marshmallows
Puffed rice cereal: obviously 😉
For the Minnie Mouse portion you’ll need
Mickey Mouse cookie cutter: you can find these online or even in some baking stores
Pink melting chocolate discs
White cookie frosting
Sprinkles (optional but super cute!)

To make the Rice Krispies
Start by browning your butter. I like to use a heavy bottomed soup pot (like a Dutch oven) when making Rice Krispies. It makes it easier when mixing everything together.
Once the butter is browned, turn the heat down low and add in the mini marshmallows. Mix this together until everything is melted.
Turn the heat off and slowly add in the rice cereal and mix until combined.
When everything is mixed together, quickly pour the rice cereal mixture onto a buttered sheet tray and spread out.
After the mixture is cooled slightly, cut out the shape using the cookie cutter. Line up the Minnie Mouse shaped treats onto parchment paper to decorate.
In a small bowl, melt the pink chocolate according to package instructions. With a small spoon, fill in the ears and the top of the head with melted chocolate and add sprinkles.

When that has hardened, draw a bow outline with the white cookie frosting. Wait a minute or two and then fill in the white bow. We decided to add a large sprinkle in the middle of the bow!


Super simple and delicious!
How to brown butter
To be honest I was intimidated by the thought of browning butter at first, but to my surprise, it was so easy!
Start with a pan on medium heat (you can use a skillet or Dutch oven like I am). Put the butter into the pan to start melting. Once the butter has melted, it will start to foam and bubble up slightly. This is the browning process. Stir the butter gently while it’s foaming to keep it from burning. The cooking process will vary depending on your stove. It should take anywhere from 2-5 minutes. Keep a close eye on the pan and once you start to smell the nuttiness and see little brown solid bits form in the bottom of the pan then you know it’s done. The brown bits are what give this butter its delicious flavor! NOTE: If the bits turn to black, throw the butter out, rinse the pan, and start again.

Minnie Mouse Rice Krispies
Ingredients
- 12 cups puffed rice cereal
- 1 cup salted butter
- 20 oz marshmallows
- 12 oz pink melting chocolate
- 1 tube white cookie frosting with a tip
- sprinkles optional
- Mickey Mouse cookie cutter
Instructions
- Butter a large sheet tray and set aside.
- Start by browning the butter. Heat a deep pot to medium heat and put in the sticks of butter. Allow the butter to melt and start to foam up. Stir the butter gently until it becomes golden brown and smells fragrant.
- Once the butter is brown, turn the heat to low and add the marshmallows to the pot. Mix until melted.
- Carefully transfer the Rice Krispie mixture to the buttered sheet tray and spread out evenly.
- Once the treats are cool to the touch, cut out the shapes using the cookie cutter and set them on a parchment sheet to be decorated.
For the decorations
- Melt the pink chocolate discs according the package instructions.
- With a spoon, fill in the ears of the cutout and the top of the head in pink and add sprinkles to the ears if using.
- Once that is dry, pipe a bow outline with the white cookie icing. After 2-3 minutes fill in the bow with white.
- Let dry overnight and serve!
